DIY Preserved Bamboo Shoots


First, cut disposable chopsticks into small pieces. Preferbably use brand new chopsticks.



Immerse them in a pot of wine for several days. You can use rice wine or white wine.

Add in flavoring (salt). If you like something spicy, you can add some ground blackpepper.


Add in soda bicarbonate
Add in some sugar. Try to use icing sugar. Avoid using rock sugar.


Add in some soya sauce. Kikkoman is the best here.
Bring it to boil for several minutes.
Store it in a jar and let it cool before sealing it. Place it in a cool dry place for preservation.

It is ready to serve when the "bamboo shoots" absorbs all the gravy in the jar.

You can eat it straight from the jar...

Or stir fry it with vegetable and chicken fillet.
